Pistou Soup

Ingredients

Serves 2

1 tbsp olive oil

1/4 leek

1/2 carrot

1/2 courgette

25g broad beans( we used frozen)

20g french beans

25g tinned haricot beans

25g frozen peas

50g potato

400ml stock

50g orzo

Pistou

15g basil

1 clove garlic

2 tbsp olive oil.

How to Make

  1. Wash the leek and slice thinly

  2. Peel the carrot and dice.

  3. Heat the oil is a large sauce pan. Add the leek, carrot and cook gently for 5 mins.

  4. Chop the courgette and add to the pot and cook for 2 mins.

  5. Add the stock to the pan and simmer

  6. Peel the potato and dice then add to the pot along with the orzo pasta

  7. Top and tail the french beans and snap into two and add to the pot

  8. Remove the inner pod from the broad beans then add to the pot.

  9. Mash half of the haricot beans and then add to the pot

    Pistou:

  10. Grind the garlic, basil and oil together in a pestle and mortar or food processor

  11. Spoon the soup into a bowl and top with pistou sauce to serve.
